to paint or not to paint

Our Sumo is pretty much finished and we've sent off for the SVA test. We had planned to have it painted immediately after the SVA, however I've heard that it's best to let the body settle before painting it, by driving it for a few months in gel coat. We're also not too keen on having it freshly painted in preparation for below freezing winter temperatures. I was just wondering what your opinions about painting it were? Has any waited then painted it?
