The first thing I would do is install a mechanical gauge temporally under the bonnet to see if the electrical one is reading accurately.
If the engine has inadequate oil pressure is is usually noisy.
Is the pressure sending unit in an easy place to get to?
I would remove the pressure sending unit and hook the mechanical gauge up there.
