It sounds almost as if fluid is being removed from the system whilst the brakes are not being used and requires pumping to get the additional fluid into the master before the brakes bite. That in turn sounds like there might be air in the system otherwise it wouldn't happen as all that would be sucked back would be fluid unless a vacuum is being created in the system somewhere.

Was it a secondhand or new/reconditioned servo unit ?
I had a servo assist on an MG which occasionally used to give strange results depending how I applied the brakes.
Do you have the same flat to the floor feeling when you " emergency brake" stomp on the pedal as opposed to normal application?
