What's to stop me fitting a Pinto engine to my Sumo then swapping it for a new Chevy straight after the SVA? and at the next MOT would they test it to the original spec or to the new Chevy one ?

You should be ok, My sumo is registered on a 1978 plate but the engine is from a 95 car. Never had a problem with mot and emissions, because the car is on a 78 plate the test is just visual.

The tester (a woman) never asked any questions even though its an efi engine.

I thought the visual was pre aug1st 1975? or has it changed. Sounds like there are massive differences between testing stations.

By discussing points like this in a public forum we are pointing out loop holes in the law to people who may be able to do something about it. Worth bearing in mind. ;-)

A woman doing MOTs, now I have heard it all. Does it fail if it’s blue and pass if it’ s a lovely metallic salmon with a hint of violet and has lights next to the sun visor mirror so you can hold up the traffic at the lights at night as well as in the day!!
