Brake fluid -a question of dots

I thought the difference between DOT3/4/5 brake fluids was the boiling point temperature & that the higher the spec of DOT rating, the higher the boiling temp is. So, having found some old stuff in the garage (that I keep only for reference), its DOT 5.1 boiling point 184'C, I looked in Demon Tweeks & have found EBC DOT4 fluid 'for racing' boiling point 196'C
Clearly my understanding is incorrect, so which is the one to use?

Am I right in thinking that the DOT 5 does not need changing-ever? My tin says so. Well its plastic actually!
